Creamy Italian Sausage & Gnocchi Soup is the ultimate cozy comfort in a bowl. With tender gnocchi, rich sausage, and a velvety broth, it’s perfect for chilly nights or anytime you need a hug in soup form.


Ingredients

  • 1 pound Italian sausage (mild or spicy)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 1 package (16 oz) potato gnocchi
  • 1 teaspoon dried Italian herbs
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or grated Parmesan, for garnish


Instructions

  1. In a large Dutch oven, heat olive oil over medium heat. Add Italian sausage and cook for 7–9 minutes, breaking it into small pieces until browned and cooked through.
  2. Add diced onion and sauté for about 5 minutes until softened. Stir in garlic and cook for 1 minute until fragrant.
  3. Pour in chicken broth, scraping up any brown bits. Stir in Italian herbs and optional red pepper flakes. Bring to a gentle simmer.
  4. Add gnocchi directly to the broth. Cook per package directions (about 3 minutes) until gnocchi float and become tender.
  5. Lower heat and stir in heavy cream. Add spinach and cook for 2 minutes until wilted.
  6. Season with salt and pepper. Let soup rest for 5 minutes to thicken slightly. Serve hot, garnished with parsley or Parmesan.

Notes

For best results, use high-quality gnocchi and avoid boiling after adding cream. To freeze, prepare only the sausage and broth base, adding gnocchi and spinach fresh when reheating.
