Description

These creamy garlic potato noodles are pure comfort, homemade, hand-rolled noodles tossed in a rich garlic cream sauce with parmesan. A cozy, satisfying dish that’s perfect for chilly nights or family dinners.


Ingredients

  • 2 cups mashed potatoes (room temperature)
  • 1 cup all-purpose flour (plus more for dusting)
  • 1 egg yolk
  • Salt, to taste
  • 2 tbsp unsalted butter
  • 56 garlic cloves, finely minced
  • ¾ cup heavy cream
  • ½ cup freshly grated parmesan
  • 1 tsp black pepper
  • Optional: fresh parsley for garnish


Instructions

  1. Make the Dough:
    • In a large bowl, combine mashed potatoes, flour, and egg yolk.
    • Mix until a soft dough forms, tacky but not sticky. Add more flour if needed.
    • Let dough rest for 10 minutes.
  2. Shape the Noodles:
    • On a floured surface, divide dough into 4 sections and roll each into a ½-inch thick rope.
    • Cut into 1-inch pieces and gently roll into oval shapes.
  3. Cook the Noodles:
    • Bring salted water to a boil. Add noodles in batches.
    • Once they float (about 2–3 minutes), cook 2 minutes more.
    • Remove with slotted spoon and set aside.
  4. Prepare the Garlic Cream Sauce:
    • In a large skillet, melt butter over medium heat.
    • Add minced garlic and sauté until fragrant, about 1 minute.
    • Stir in cream, bring to a gentle simmer, and thicken 3–5 minutes.
  5. Finish It Off:
    • Add cooked noodles to the skillet and toss to coat.
    • Stir in parmesan, salt, and black pepper.
    • Cook 1 more minute until fully heated.
    • Top with fresh parsley and serve warm.

Notes

Use starchy potatoes like Russet or Yukon Gold and ensure they’re dry, leftover mashed potatoes are perfect. Don’t overwork the dough to avoid gummy noodles. Simmer the sauce longer or add more parmesan if it’s too thin.
