Description

A warm and comforting creamy garlic chicken ramen, perfect for chilly evenings.


Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 tablespoon ginger, grated
  • 4 cups low-sodium chicken broth
  • 1 cup whole milk or unsweetened oat milk
  • 1/2 cup heavy cream
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste (optional)
  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 packages ramen noodles (discard seasoning packets)
  • 2 cups baby spinach or bok choy
  • 2 green onions, sliced
  • 1 soft-boiled egg per bowl (optional)
  • Salt and pepper to taste
  • Toasted sesame oil and chili flakes for finishing


Instructions

  1. Season chicken pieces with salt and pepper. Heat olive oil in a large pot over medium heat and brown the chicken for about 4–6 minutes. Remove and set aside.
  2. In the same pot, add a bit more oil and sauté onion until translucent. Add minced garlic and grated ginger, cooking until fragrant (about 1 minute).
  3. Pour in chicken broth and bring to a simmer. Stir in milk, heavy cream, soy sauce, and miso paste. Let simmer for 8–10 minutes.
  4. Add ramen noodles and cook according to package directions. In the last minute, stir in spinach or bok choy to wilt.
  5. Return the cooked chicken to the pot to warm through. Taste and adjust seasoning. Serve topped with green onions, a drizzle of sesame oil, chili flakes, and a soft-boiled egg.

Notes

Use good-quality broth for the best flavor. Don’t overcook garlic to prevent bitterness.
