Description
A warm and comforting creamy garlic chicken ramen, perfect for chilly evenings.
Ingredients
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 medium onion, finely chopped
- 1 tablespoon ginger, grated
- 4 cups low-sodium chicken broth
- 1 cup whole milk or unsweetened oat milk
- 1/2 cup heavy cream
- 2 tablespoons soy sauce
- 1 tablespoon miso paste (optional)
- 2 boneless skinless chicken breasts, cut into bite-sized pieces
- 2 packages ramen noodles (discard seasoning packets)
- 2 cups baby spinach or bok choy
- 2 green onions, sliced
- 1 soft-boiled egg per bowl (optional)
- Salt and pepper to taste
- Toasted sesame oil and chili flakes for finishing
Instructions
- Season chicken pieces with salt and pepper. Heat olive oil in a large pot over medium heat and brown the chicken for about 4–6 minutes. Remove and set aside.
- In the same pot, add a bit more oil and sauté onion until translucent. Add minced garlic and grated ginger, cooking until fragrant (about 1 minute).
- Pour in chicken broth and bring to a simmer. Stir in milk, heavy cream, soy sauce, and miso paste. Let simmer for 8–10 minutes.
- Add ramen noodles and cook according to package directions. In the last minute, stir in spinach or bok choy to wilt.
- Return the cooked chicken to the pot to warm through. Taste and adjust seasoning. Serve topped with green onions, a drizzle of sesame oil, chili flakes, and a soft-boiled egg.
Notes
Use good-quality broth for the best flavor. Don’t overcook garlic to prevent bitterness.
