Description

Delicious bagels filled with a creamy cheese swirl and crispy bacon, perfect for weekend breakfasts.


Ingredients

  • 3 1/2 cups bread flour (or all-purpose for a slightly softer crust)
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 1/4 cups warm water (about 105–110°F)
  • 1 tbsp granulated sugar
  • 1 1/2 tsp salt
  • 1 tbsp vegetable oil
  • 1 cup shredded sharp cheddar cheese, divided
  • 6 oz cream cheese, softened
  • 6 slices smoked turkey bacon, cooked until crisp and chopped
  • 1 egg (for egg wash) beaten with 1 tbsp water
  • Optional: everything bagel seasoning or sesame seeds for topping


Instructions

  1. Activate the yeast: In a small bowl, stir warm water and sugar, sprinkle yeast over the top, and let sit 5–10 minutes until foamy.
  2. Make the dough: In a large bowl, combine flour and salt. Add yeast mixture and oil, mixing until a shaggy dough forms. Knead on a floured surface for 8–10 minutes until smooth and elastic.
  3. Place dough in a lightly oiled bowl, cover, and let rise 1 hour until doubled.
  4. Prepare the filling: In a bowl, beat softened cream cheese with 1/2 cup shredded cheddar until smooth. Fold in chopped crisp turkey bacon and set aside.
  5. Punch down dough and divide into 8 equal pieces. Flatten each piece, place 1–2 tbsp of the cream cheese mixture in the center, fold the edges over to seal, and shape into rounds.
  6. Preheat oven to 425°F (220°C). Place shaped bagels on a parchment-lined tray, cover, and rest 20–30 minutes.
  7. Boil bagels: Bring a large pot of water to a gentle boil and add 1 tbsp sugar. Boil bagels 1 minute per side, remove with a slotted spoon, and place back on the parchment.
  8. Brush with egg wash and sprinkle remaining cheddar and any seeds.
  9. Bake: Bake 18–22 minutes until golden and cheese is bubbly. Cool on a rack for 10 minutes before slicing.

Notes

Dough should be tacky but not sticky; add flour a tablespoon at a time if it’s too wet. For best texture, slice and toast before serving.
