Crispy tortillas, saucy seasoned beef, melty cheese, and fresh toppings make these Copycat Taco Bell Mexican Pizzas the ultimate weeknight dinner. Fast, fun, and nostalgic, they’re better than takeout—and totally customizable at home.
Ingredients
- 8 small flour tortillas (or gluten-free/low-carb alternatives)
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (15 oz) refried beans
- 1 cup enchilada sauce (store-bought or homemade)
- 2 cups shredded Mexican blend cheese
- 1 tomato, diced
- 2 green onions, sliced
- Oil for frying or brushing tortillas
Instructions
- Preheat oven to 400°F (200°C).
- Lightly pan-fry or air-fry the tortillas until golden and crisp. Set aside.
- In a skillet, cook ground beef until browned. Drain excess fat, add taco seasoning and a splash of water. Simmer for 5 minutes.
- Warm refried beans in a small pan until spreadable.
- On a baking sheet, place 4 tortillas. Spread each with beans, then layer with seasoned beef.
- Top with another tortilla, spoon enchilada sauce over each, and sprinkle with shredded cheese.
- Broil or bake for 5–7 minutes until cheese is melted and bubbly.
- Remove from oven and top with diced tomatoes and green onions.
- Slice and serve with sour cream, guacamole, or hot sauce if desired.
Notes
To make it vegetarian, swap beef for black beans, lentils, or tofu. Use gluten-free tortillas and double-check sauce labels for allergen safety. These reheat well in the air fryer or toaster oven for a crisp finish.
