Ingredients
1 ripe banana (mashed)
1/4 cup unsweetened applesauce
1/4 cup almond butter or peanut butter
1 tsp vanilla extract
1 cup rolled oats
1/3 cup almond flour
1/2 tsp cinnamon
1/4 tsp baking soda
Pinch of sea salt
Optional: 1/4 cup dark chocolate chips or chopped walnuts
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, mash the banana, then mix in applesauce, nut butter, and vanilla.
Stir in oats, almond flour, cinnamon, baking soda, and salt until fully combined.
Fold in chocolate chips or nuts if using.
Scoop dough onto prepared sheet using a spoon or cookie scoop. Flatten slightly.
Bake for 10–12 minutes, or until edges are lightly golden.
Let cool on pan for 5 minutes before transferring to a wire rack.
Notes
Cookies will be soft; for a crispier version, bake 2–3 minutes longer.
Store in an airtight container at room temperature for 3 days or refrigerate for 1 week.
Freeze for up to 3 months.
To make vegan: ensure chocolate chips are dairy-free.
To make nut-free: use sunflower seed butter instead of almond or peanut.
