Ingredients
- 1 1/2 cups jasmine rice, rinsed
- 1 can (14 oz) full-fat coconut milk
- 1 cup low-sodium fish or vegetable broth
- 1 lb firm white fish fillets (cod, halibut, or tilapia), cut into large chunks
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1–2 tbsp red curry paste (adjust to taste)
- Zest and juice of 2 limes
- 1 tbsp fish sauce or tamari for depth
- 1 red bell pepper, sliced
- 1 cup snap peas or green beans, trimmed
- 2 tbsp neutral oil (coconut or vegetable)
- Fresh cilantro and sliced green onions for garnish
- Salt and pepper to taste
- Optional: 1 tsp brown sugar or palm sugar to balance acidity
Instructions
- Cook the jasmine rice: In a medium pot, combine rinsed jasmine rice with 1 3/4 cups water. Bring to a boil, reduce to low, cover, and simmer 15 minutes. Remove from heat and let rest 10 minutes with the lid on.
- Prepare the curry base: Heat oil in a deep skillet or saucepan over medium heat. Add sliced onion and cook until softened, 4–5 minutes. Stir in garlic and ginger for 1 minute until fragrant. Add red curry paste and cook for 30 seconds, stirring to release aromatics.
- Build the sauce: Pour in coconut milk and broth, whisking to blend the curry paste. Bring to a gentle simmer. Add lime zest, lime juice, fish sauce (or tamari), and sugar if using. Taste and adjust seasoning.
- Add vegetables and fish: Add bell pepper and snap peas; simmer 3–4 minutes until vegetables are just tender. Gently nestle fish chunks into the simmering sauce. Poach gently for 5–7 minutes depending on thickness, until fish is opaque and flakes easily.
- Finish and serve: Remove from heat and stir in chopped cilantro and green onions. Serve the curry over steaming jasmine rice and garnish with extra lime wedges.
