Ingredients
- 3 large eggs, separated
- 3 tablespoons full fat Greek yogurt or cream cheese
- 1/4 teaspoon cream of tartar
- Pinch of salt (optional)
- 1 fried egg (sunny side or over hard)
- 1 slice sharp cheddar cheese
- 2 slices turkey bacon or vegetarian alternative
- Optional: sliced avocado, hot sauce, or fresh spinach
Instructions
- Preheat oven to 300°F (150°C). Line a tray with parchment paper.
- Separate egg whites and yolks into two bowls.
- Whip egg whites with cream of tartar until stiff peaks form.
- Mix yolks with yogurt or cream cheese until smooth.
- Gently fold the whipped whites into the yolk mixture without deflating.
- Spoon mixture onto tray in round sandwich-sized discs.
- Bake for 25–30 minutes until golden. Let cool completely before using.
- Fry egg and cook turkey bacon as desired.
- Layer egg, cheese, and turkey bacon (plus any extras) between two cloud bread rounds.
