Description

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/8 tsp ground cloves


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. Cream together butter, brown sugar, and white sugar until light and fluffy.
  3. Mix in pumpkin puree, egg yolk, and vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, salt, and spices.
  5. Gradually combine dry ingredients with the wet ingredients, stirring until just mixed.
  6. Let dough rest for 10 minutes to allow the spices to deepen in flavor.
  7. Scoop dough into even portions and place on prepared baking sheet. Flatten gently for crisp edges, or leave rounded for a chewy center.
  8. Decorate with cinnamon sugar, sprinkles, or candy eyes if desired.
  9. Bake for 10–12 minutes until edges are set but centers look slightly underdone.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For crispier cookies, flatten dough slightly more and bake for an additional 1–2 minutes. Dough can be frozen in scoops and baked straight from frozen—just add 2 extra minutes to the bake time.
