Ingredients

  • 8 slices of sandwich bread (white or sturdy whole wheat)
  • 3 large eggs
  • 1/2 cup milk (or any plant-based milk)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon, plus 2 tablespoons for coating
  • 1/4 cup granulated sugar, plus 1/4 cup for coating
  • 2 tablespoons softened butter (or neutral oil for brushing)
  • 1/2 cup cream cheese or sweet ricotta for filling (optional)
  • Fruit jam or sliced fruit (optional filling)
  • Nonstick spray or extra butter for the pan


Instructions

  1. Prepare the bread: Trim the crusts off each slice and use a rolling pin to flatten each piece into a thin, even rectangle.
  2. Make the custard: In a shallow dish, whisk together eggs, milk, vanilla, and 1 teaspoon cinnamon until smooth.
  3. Mix the coating: In a separate shallow bowl combine 1/4 cup granulated sugar with 2 tablespoons cinnamon; set aside.
  4. Fill and roll: Spread a thin layer of cream cheese or jam across each flattened slice, leaving a little space at the edges. Roll the bread tightly from one short side to the other to create a neat cylinder.
  5. Dip and cook: Briefly dip each roll-up in the egg mixture, rolling to coat evenly but not soaking through. Heat a nonstick skillet over medium heat and melt a little butter. Place roll-ups seam-side down and cook, turning to brown all sides, about 2–3 minutes per side.
  6. Coat in cinnamon sugar: Remove from the pan and immediately roll each warm roll-up in the cinnamon-sugar mixture so it adheres and becomes slightly crunchy.
  7. Serve warm: Cut each roll-up in half if desired and serve with maple syrup, fruit, or a dusting of powdered sugar.

Notes

Don’t oversoak the bread to keep it tender. You can assemble and refrigerate roll-ups for up to 24 hours before cooking for ease.
