Ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine salt
- 2 large eggs
- 1 3/4 cups milk (whole or plant-based)
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 1/3 cup brown sugar, packed
- 2 tablespoons granulated sugar
- 2 teaspoons ground cinnamon
- 2 tablespoons melted butter
- 4 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1–2 tablespoons milk (to thin)
- 1/2 teaspoon vanilla extract
Instructions
- Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Combine wet ingredients: In another bowl, whisk eggs, milk, melted butter, and vanilla until smooth.
- Make the batter: Pour the wet into the dry and gently stir until just combined — a few small lumps are okay.
- Prepare the cinnamon swirl: In a small bowl, combine brown sugar, granulated sugar, cinnamon, and melted butter to form a thick paste.
- Heat the griddle: Warm a nonstick skillet over medium heat and lightly grease with butter or oil.
- Cook in layers: Spoon 1/4 cup batter onto the griddle for each pancake, drop a teaspoon of the cinnamon mixture in the center, and swirl gently.
- Cook until bubbles form, about 2–3 minutes. Flip and cook for another 1–2 minutes until golden.
- Make the glaze: Beat cream cheese, powdered sugar, vanilla, and enough milk to reach a pourable consistency.
- Serve: Stack pancakes, drizzle with cream cheese glaze, and add a pat of butter if desired.
Notes
Don’t overmix the batter for fluffier pancakes. Room temperature ingredients help in achieving the best texture.
