Description

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 2 large eggs
  • 1 3/4 cups milk (whole or plant-based)
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1/3 cup brown sugar, packed
  • 2 tablespoons granulated sugar
  • 2 teaspoons ground cinnamon
  • 2 tablespoons melted butter
  • 4 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1–2 tablespoons milk (to thin)
  • 1/2 teaspoon vanilla extract


Instructions

  1. Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. Combine wet ingredients: In another bowl, whisk eggs, milk, melted butter, and vanilla until smooth.
  3. Make the batter: Pour the wet into the dry and gently stir until just combined — a few small lumps are okay.
  4. Prepare the cinnamon swirl: In a small bowl, combine brown sugar, granulated sugar, cinnamon, and melted butter to form a thick paste.
  5. Heat the griddle: Warm a nonstick skillet over medium heat and lightly grease with butter or oil.
  6. Cook in layers: Spoon 1/4 cup batter onto the griddle for each pancake, drop a teaspoon of the cinnamon mixture in the center, and swirl gently.
  7. Cook until bubbles form, about 2–3 minutes. Flip and cook for another 1–2 minutes until golden.
  8. Make the glaze: Beat cream cheese, powdered sugar, vanilla, and enough milk to reach a pourable consistency.
  9. Serve: Stack pancakes, drizzle with cream cheese glaze, and add a pat of butter if desired.

Notes

Don’t overmix the batter for fluffier pancakes. Room temperature ingredients help in achieving the best texture.
