Description

These Chocolate Marshmallow Swirl Cookies combine the nostalgia of s’mores with classic chocolate cookies, featuring gooey marshmallow swirls.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • Optional: 1/2 cup chopped toasted nuts or toffee bits


Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. Cream the softened butter with granulated and brown sugar until light and fluffy, about 2–3 minutes.
  3. Add the eggs one at a time, then mix in the vanilla until combined.
  4. Combine the flour, cocoa powder, baking soda, and salt in a separate bowl.
  5. Mix the dry ingredients into the wet mixture until just combined. Fold in the chocolate chips.
  6. Form cookies by scooping about 2 tablespoons of dough, flattening slightly, placing a few mini marshmallows in the center, wrapping the dough around them, and rolling into a ball.
  7. Bake for 10–12 minutes, or until edges are set but centers remain soft.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack to finish cooling.

Notes

For variations, substitute gluten-free flour, add streusel topping, or include graham crackers for a s’mores twist.
