A flavorful Chili Lime Chicken dish combining citrusy lime, smoky chili, and a touch of brown sugar, perfect for weeknights or cozy weekend baking.
Ingredients
- 4 boneless chicken breasts or thighs (about 1.5–2 pounds)
- 3 tablespoons olive oil
- 2 tablespoons lime juice (fresh)
- Zest of 1 lime
- 2 tablespoons brown sugar
- 1 teaspoon chili powder (or smoked paprika for milder heat)
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon kosher salt (adjust to taste)
- 1/4 teaspoon freshly ground black pepper
- Optional garnish: chopped cilantro, lime wedges
Instructions
- Pat the chicken dry with paper towels. In a small bowl, whisk together olive oil, lime juice, lime zest, brown sugar, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Place chicken in a shallow dish or zip-top bag and pour the marinade over it. Massage the marinade into the meat so every piece is coated.
- Marinate at least 30 minutes at room temperature or up to 4 hours in the refrigerator for deeper flavor.
- Preheat your oven to 400°F (200°C). Line a baking sheet with foil or parchment and arrange the chicken in a single layer.
- Bake for 18–22 minutes, until the internal temperature reaches 165°F (74°C). For extra color, broil for 1–2 minutes at the end.
- Let the chicken rest for 5 minutes before slicing. Garnish with chopped cilantro and lime wedges.
- Serve alongside roasted squash, a warm grain, or a crisp fall salad.
