Description

These nutritious and delicious Chickpea and Oat Patties are a cozy fall favorite, perfect for gatherings with family and friends.


Ingredients

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup rolled oats (gluten-free if necessary)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1 tablespoon lemon juice
  • 1 egg or 1 flax egg (for a vegan option: 1 tablespoon ground flaxseed mixed with 2.5 tablespoons water)
  • Extra olive oil for frying


Instructions

  1. Mash chickpeas in a large mixing bowl until mostly smooth with some chunky bits.
  2. Combine the rolled oats, cumin, paprika, salt, and black pepper in a separate bowl.
  3. Sauté the onion and garlic in olive oil over medium heat until softened, about 3-4 minutes. Stir in grated carrot and cook for an additional 2 minutes.
  4. Mix the sautéed vegetables, dry oatmeal mixture, lemon juice, and parsley into the mashed chickpeas. Stir in the egg or flax egg until well combined.
  5. Form the mixture into small, burger-sized patties (about 8-10 patties).
  6. Cook the patties in a skillet with olive oil over medium heat for about 4-5 minutes on each side until golden brown.
  7. Serve warm, enjoying the patties fresh from the skillet.

Notes

For added flavor, don’t skip sautéing the onion and garlic. If the mixture is dry, add a splash of water or more oil; if too wet, mix in extra oats.
