Description
These nutritious and delicious Chickpea and Oat Patties are a cozy fall favorite, perfect for gatherings with family and friends.
Ingredients
- 1 can (15 oz) chickpeas, rinsed and drained
- 1 cup rolled oats (gluten-free if necessary)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, grated
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (optional)
- 1 tablespoon lemon juice
- 1 egg or 1 flax egg (for a vegan option: 1 tablespoon ground flaxseed mixed with 2.5 tablespoons water)
- Extra olive oil for frying
Instructions
- Mash chickpeas in a large mixing bowl until mostly smooth with some chunky bits.
- Combine the rolled oats, cumin, paprika, salt, and black pepper in a separate bowl.
- Sauté the onion and garlic in olive oil over medium heat until softened, about 3-4 minutes. Stir in grated carrot and cook for an additional 2 minutes.
- Mix the sautéed vegetables, dry oatmeal mixture, lemon juice, and parsley into the mashed chickpeas. Stir in the egg or flax egg until well combined.
- Form the mixture into small, burger-sized patties (about 8-10 patties).
- Cook the patties in a skillet with olive oil over medium heat for about 4-5 minutes on each side until golden brown.
- Serve warm, enjoying the patties fresh from the skillet.
Notes
For added flavor, don’t skip sautéing the onion and garlic. If the mixture is dry, add a splash of water or more oil; if too wet, mix in extra oats.
