Description

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups fresh spinach, roughly chopped
  • 1 cup mushrooms, sliced (cremini or button)
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup shredded mozzarella cheese (or a dairy-free alternative)
  • 1/2 cup heavy cream (or a plant-based alternative)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: Fresh parsley for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the olive oil over medium heat. Add onion and garlic; sauté until translucent, about 3-4 minutes. Add mushrooms and cook until tender, about 5 minutes. Stir in spinach and cook until wilted.
  3. Prepare the chicken breasts with salt, pepper, and oregano.
  4. Combine sautéed veggies, heavy cream, and half of the mozzarella cheese in a bowl.
  5. Assemble by placing chicken in a greased baking dish, topping with creamy mixture, and sprinkling remaining mozzarella on top.
  6. Bake covered with aluminum foil for 25 minutes, then uncover and bake for an additional 10-15 minutes until chicken is cooked through.
  7. Serve with a garnish of fresh parsley if desired.
