A hearty, low-carb oven dish with chicken, spinach, and mushrooms that will warm your soul.
Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 cups fresh spinach, roughly chopped
- 1 cup mushrooms, sliced (cremini or button)
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 1 cup shredded mozzarella cheese (or a dairy-free alternative)
- 1/2 cup heavy cream (or a plant-based alternative)
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional: Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté the olive oil over medium heat. Add onion and garlic; sauté until translucent, about 3-4 minutes. Add mushrooms and cook until tender, about 5 minutes. Stir in spinach and cook until wilted.
- Prepare the chicken breasts with salt, pepper, and oregano.
- Combine sautéed veggies, heavy cream, and half of the mozzarella cheese in a bowl.
- Assemble by placing chicken in a greased baking dish, topping with creamy mixture, and sprinkling remaining mozzarella on top.
- Bake covered with aluminum foil for 25 minutes, then uncover and bake for an additional 10-15 minutes until chicken is cooked through.
- Serve with a garnish of fresh parsley if desired.
