Instructions
Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook the pasta al dente according to package instructions.
- Drain and rinse under cold water to stop cooking and prevent sticking.
Prepare the Chicken
- Grilled Option: Season chicken with salt, pepper, and a drizzle of olive oil. Grill over medium heat for 5-7 minutes per side, until fully cooked. Let cool and slice.
- Baked Option: Season chicken and bake at 375°F (190°C) for 20-25 minutes until the internal temperature reaches 165°F (75°C). Let cool and slice.
- Rotisserie Option: Simply shred pre-cooked rotisserie chicken for a quick and easy alternative.
Make the Caesar Dressing
- In a bowl, whisk together mayonnaise (or Greek yogurt), Parmesan cheese, lemon juice, Dijon mustard, garlic, Worcestershire sauce, salt, and pepper until smooth.
Assemble the Salad
- In a large mixing bowl, combine pasta, chopped romaine, grilled chicken, and cherry tomatoes (if using).
- Drizzle with Caesar dressing and toss gently to coat everything evenly.
Add the Final Touches
- Sprinkle with Parmesan cheese, croutons, and red onion slices (if using).
- Serve immediately, or refrigerate for up to 2 days for meal prep.
Notes
- or a healthier version, use whole wheat pasta and swap mayonnaise for Greek yogurt in the dressing.
- If making ahead, store the dressing separately and toss it with the salad right before serving to keep ingredients fresh and crisp.
- Add crispy bacon, avocado, or capers for an extra flavor boost.
- If using store-bought Caesar dressing, choose one with high-quality ingredients for the best taste.
