Ingredients
- 4 boneless, skinless chicken breasts, pounded thin
- 8 slices mild Swiss or cheddar cheese
- 8 thin slices turkey deli meat
- 1 cup plain breadcrumbs (or panko for extra crunch)
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 2 tablespoons Dijon mustard
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 3 tablespoons butter, melted (for basting)
- 2 tablespoons olive oil (for pan searing)
Instructions
- Prep the chicken: Place each chicken breast between two sheets of parchment and gently pound to about 1/4-inch thickness. Season both sides with salt, pepper, thyme, and garlic powder.
- Assemble the rolls: Spread a thin layer of Dijon mustard on each flattened breast. Lay one slice of turkey and two slices of cheese over each piece, leaving a small border. Roll tightly and secure with toothpicks.
- Dredge: Set out three shallow dishes — flour, beaten eggs, and breadcrumbs. Lightly coat each roll in flour, dip in egg, then press into breadcrumbs until well coated.
- Brown the rolls: Heat olive oil in a large ovenproof skillet over medium-high heat. Add the rolls seam-side down and brown on all sides about 2–3 minutes per side.
- Finish in the oven: Brush the browned rolls with melted butter and transfer skillet to a preheated 375°F (190°C) oven. Bake for 18–22 minutes, until internal temperature reaches 165°F and the cheese is bubbly.
- Rest and serve: Let the Chicken Blue Ribbon rest 5 minutes before removing toothpicks and slicing. Serve with roasted root vegetables or a buttery noodle side.
