Ingredients
- 2 pounds baby red potatoes, washed and quartered
- 14 oz smoked beef sausage, sliced into coins
- 2 tablespoons olive oil
- 1 packet ranch seasoning mix
- 1 ½ cups shredded cheddar cheese
- ½ cup shredded mozzarella (optional)
- 2 tablespoons sour cream
- ½ teaspoon paprika (optional)
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 2 green onions, thinly sliced (for garnish)
- Fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish with oil or cooking spray.
- In a large bowl, toss the potatoes with olive oil, ranch seasoning, garlic powder, paprika, salt, and pepper until coated.
- Add sliced smoked sausage and toss again to coat evenly.
- Transfer mixture to the baking dish and spread in an even layer. Cover with foil.
- Bake covered for 30 minutes. Remove foil and bake for another 15–20 minutes until potatoes are tender and edges are crisp.
- Sprinkle cheddar and mozzarella cheese over the top. Return to oven uncovered for 5–7 minutes until cheese is bubbly and golden.
- Remove from oven, drizzle with sour cream, and garnish with green onions and parsley. Serve warm.
Notes
Use waxy potatoes like red or Yukon gold for best results. Taste before salting—sausage and ranch mix are already seasoned. For extra richness, stir in cream cheese before baking.
