Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 1/2 tsp smoked paprika
- 1 tsp dried thyme
- Salt and black pepper to taste
- 1 1/2 lb baby potatoes, halved or quartered
- 1 cup beef broth
- 1/2 cup milk (or a dairy alternative)
- 1 1/2 cups shredded cheddar cheese
- 1/4 cup grated Parmesan
- 2 tbsp chopped parsley for garnish
Instructions
- Prep the skillet: Heat a large, oven-safe skillet or Dutch oven over medium heat and add the olive oil.
- Brown the beef: Add the ground beef and cook, breaking it up with a spoon, until just browned. Season with salt, pepper, smoked paprika, and thyme.
- Sauté aromatics: Push the beef to the side and add the onion and garlic. Cook until the onion is soft and translucent, about 4 minutes.
- Add potatoes and broth: Stir in the potatoes, then pour in the beef broth and milk. Bring to a simmer, cover, and let cook for 12–15 minutes, or until the potatoes are fork-tender.
- Melt the cheese: Sprinkle the cheddar and Parmesan evenly over the mixture. Cover again and let the cheese melt for 3–5 minutes. If your skillet is oven-safe, place it under a broiler for 1–2 minutes to achieve a golden top.
- Finish and serve: Sprinkle with chopped parsley and serve warm.
