Description

A warm, comforting one-pot meal featuring tender ground beef, golden potatoes, and gooey cheese, perfect for autumn evenings.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 1 1/2 lb baby potatoes, halved or quartered
  • 1 cup beef broth
  • 1/2 cup milk (or a dairy alternative)
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup grated Parmesan
  • 2 tbsp chopped parsley for garnish


Instructions

  1. Prep the skillet: Heat a large, oven-safe skillet or Dutch oven over medium heat and add the olive oil.
  2. Brown the beef: Add the ground beef and cook, breaking it up with a spoon, until just browned. Season with salt, pepper, smoked paprika, and thyme.
  3. Sauté aromatics: Push the beef to the side and add the onion and garlic. Cook until the onion is soft and translucent, about 4 minutes.
  4. Add potatoes and broth: Stir in the potatoes, then pour in the beef broth and milk. Bring to a simmer, cover, and let cook for 12–15 minutes, or until the potatoes are fork-tender.
  5. Melt the cheese: Sprinkle the cheddar and Parmesan evenly over the mixture. Cover again and let the cheese melt for 3–5 minutes. If your skillet is oven-safe, place it under a broiler for 1–2 minutes to achieve a golden top.
  6. Finish and serve: Sprinkle with chopped parsley and serve warm.
