A comforting one-dish wonder combining seasoned meat, creamy cheese, and a golden topping, perfect for family dinners.
Ingredients
- 1 1/2 pounds ground beef
- 1 cup onion, finely chopped
- 1 cup milk
- 1 large egg
- 3/4 cup plain breadcrumbs
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/2 cup ketchup plus extra for topping
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup frozen mixed vegetables, thawed (peas, carrots, corn)
- 2 tablespoons olive oil
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil.
- Heat 2 tablespoons olive oil in a skillet over medium heat. Sauté the chopped onion until translucent, about 4–5 minutes. Add garlic for the last 30 seconds.
- Combine ground beef, sautéed onion and garlic, milk, egg, breadcrumbs, salt, pepper, oregano, and 1/2 cup ketchup in a large bowl. Mix gently with your hands until just combined.
- Press half the meat mixture into the bottom of the prepared baking dish. Scatter the thawed mixed vegetables over the meat layer, then sprinkle with half of the cheddar and mozzarella cheeses. Spread the remaining meat mixture on top and smooth.
- Spread a thin layer of ketchup over the top of the meatloaf layer, then finish with the remaining shredded cheeses. Bake for 35–45 minutes, until the internal temperature reaches 160°F (71°C).
- Let the casserole rest for 10 minutes before slicing.
Notes
Don’t overmix to keep the meat tender. Use a meat thermometer to ensure proper doneness.
