Ingredients
- 2 pounds baby red or Yukon gold potatoes, quartered
- 1 ½ cups shredded cheddar or Colby Jack cheese
- 4 cloves garlic, minced
- ¾ cup sour cream
- ¾ cup mayonnaise
- 1 packet (1 oz) ranch seasoning mix
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped green onions or parsley for garnish
- Optional: ½ cup cooked turkey bacon crumbles
- Optional: ¼ teaspoon smoked paprika
- Optional: A handful of sliced green onions mixed in
Instructions
- Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish.
- Boil chopped potatoes in salted water for 5–7 minutes until fork-tender. Drain and let steam dry.
- In a bowl, whisk sour cream, mayonnaise, garlic, ranch seasoning, and pepper. Stir in half of the shredded cheese.
- Place parboiled potatoes in the baking dish. Drizzle with olive oil and toss gently.
- Spread the creamy sauce over the potatoes to coat evenly.
- Top with remaining cheese. Add smoked paprika if using.
- Bake uncovered for 25–30 minutes until cheese is bubbling and golden. Broil for 2–3 minutes if desired.
- Let sit 5 minutes before serving. Garnish with green onions or parsley.
Notes
Use waxy potatoes like Yukon golds for best texture. For a lighter version, substitute Greek yogurt for sour cream and skip the mayo. Add cooked chicken or ground turkey to make it a full meal.
