Description

Golden roasted potatoes tossed in a creamy garlic ranch sauce and topped with bubbling cheese, this easy, comforting side dish is a guaranteed crowd-pleaser for any meal or occasion.


Ingredients

  • 2 pounds baby red or Yukon gold potatoes, quartered
  • 1 ½ cups shredded cheddar or Colby Jack cheese
  • 4 cloves garlic, minced
  • ¾ cup sour cream
  • ¾ cup mayonnaise
  • 1 packet (1 oz) ranch seasoning mix
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped green onions or parsley for garnish
  • Optional: ½ cup cooked turkey bacon crumbles
  • Optional: ¼ teaspoon smoked paprika
  • Optional: A handful of sliced green onions mixed in


Instructions

  1. Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  2. Boil chopped potatoes in salted water for 5–7 minutes until fork-tender. Drain and let steam dry.
  3. In a bowl, whisk sour cream, mayonnaise, garlic, ranch seasoning, and pepper. Stir in half of the shredded cheese.
  4. Place parboiled potatoes in the baking dish. Drizzle with olive oil and toss gently.
  5. Spread the creamy sauce over the potatoes to coat evenly.
  6. Top with remaining cheese. Add smoked paprika if using.
  7. Bake uncovered for 25–30 minutes until cheese is bubbling and golden. Broil for 2–3 minutes if desired.
  8. Let sit 5 minutes before serving. Garnish with green onions or parsley.

Notes

Use waxy potatoes like Yukon golds for best texture. For a lighter version, substitute Greek yogurt for sour cream and skip the mayo. Add cooked chicken or ground turkey to make it a full meal.
