Description
A cozy one-pot dish featuring tender chicken, creamy orzo, and broccoli all smothered in melty cheese. It’s the ultimate comfort meal for chilly evenings.
Ingredients
- 2 tablespoons olive oil
- 1 small yellow onion, diced
- 3 garlic cloves, minced
- 2 cups cooked chicken breast, shredded or cubed
- 1 cup orzo pasta
- 2 ½ cups low-sodium chicken broth
- 2 cups fresh broccoli florets, chopped small
- 1 cup shredded cheddar cheese
- ½ cup grated parmesan cheese
- ¼ cup heavy cream or full-fat milk
- Salt and black pepper, to taste
- Optional: red pepper flakes or paprika for a kick
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 2–3 minutes until soft. Stir in garlic and cook another 30 seconds until fragrant.
- Add the cooked chicken and uncooked orzo to the pan. Stir everything well so the orzo is coated with oil and starts to toast slightly.
- Pour in the chicken broth and bring to a simmer. Stir frequently and let the orzo cook for about 8–10 minutes.
- Add the chopped broccoli during the last 5 minutes of cooking. Cover the pan so it steams and softens while the orzo finishes cooking.
- Once the orzo is tender and most of the liquid is absorbed, stir in the cheddar, parmesan, and heavy cream. Turn off the heat and stir until creamy.
- Season with salt, pepper, and red pepper flakes if desired. Serve hot and enjoy.
Notes
Cut broccoli small so it cooks evenly. Stir frequently for a creamy texture. Add a splash of broth or milk when reheating to restore creaminess.
