Description

A cozy one-pot dish featuring tender chicken, creamy orzo, and broccoli all smothered in melty cheese. It’s the ultimate comfort meal for chilly evenings.


Ingredients

  • 2 tablespoons olive oil
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 2 cups cooked chicken breast, shredded or cubed
  • 1 cup orzo pasta
  • 2 ½ cups low-sodium chicken broth
  • 2 cups fresh broccoli florets, chopped small
  • 1 cup shredded cheddar cheese
  • ½ cup grated parmesan cheese
  • ¼ cup heavy cream or full-fat milk
  • Salt and black pepper, to taste
  • Optional: red pepper flakes or paprika for a kick


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 2–3 minutes until soft. Stir in garlic and cook another 30 seconds until fragrant.
  2. Add the cooked chicken and uncooked orzo to the pan. Stir everything well so the orzo is coated with oil and starts to toast slightly.
  3. Pour in the chicken broth and bring to a simmer. Stir frequently and let the orzo cook for about 8–10 minutes.
  4. Add the chopped broccoli during the last 5 minutes of cooking. Cover the pan so it steams and softens while the orzo finishes cooking.
  5. Once the orzo is tender and most of the liquid is absorbed, stir in the cheddar, parmesan, and heavy cream. Turn off the heat and stir until creamy.
  6. Season with salt, pepper, and red pepper flakes if desired. Serve hot and enjoy.

Notes

Cut broccoli small so it cooks evenly. Stir frequently for a creamy texture. Add a splash of broth or milk when reheating to restore creaminess.
