Description

Caramelized Honey Dijon Carrots are a cozy, sweet-savory side dish perfect for fall gatherings or weeknight comfort meals, quick to make, deeply flavorful, and irresistibly golden.


Ingredients

  • 2 lbs baby carrots (or peeled and sliced regular carrots)
  • 1 small red onion, thinly sliced (optional)
  • 2 tbsp Dijon mustard
  • 3 tbsp honey
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • Optional: fresh thyme or parsley for garnish


Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or grease it lightly.
  2. Whisk together the Dijon mustard, honey, olive oil, apple cider vinegar, garlic powder, smoked paprika, salt, and pepper until smooth and well blended.
  3. Place the carrots and red onion slices in a large bowl. Pour the glaze over them and toss until every piece is thoroughly coated.
  4. Spread the coated carrots in a single layer on your baking sheet. Bake for 25–30 minutes, flipping once halfway through.
  5. Sprinkle with fresh thyme or parsley just before serving.

Notes

For perfect caramelization, don’t overcrowd your baking sheet and be sure to pat carrots dry before roasting. This dish pairs beautifully with roasted meats, tofu, or even halloumi for a balanced, flavorful meal.
