Ingredients
- 4 medium apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and diced
- 2 tablespoons granulated sugar
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch (or arrowroot)
- 1 teaspoon vanilla extract
- 2 sheets store-bought pie dough or puff pastry, cut into 4 squares each
- 2 tablespoons unsalted butter, cut into small pats
- Pinch of salt
- Optional: Chopped nuts, raisins, or a sprinkle of coarse sugar
Instructions
- Prepare the filling: In a bowl combine diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, vanilla, and a pinch of salt. Toss until apples are evenly coated.
- Cut pastry: On a lightly floured surface, cut each pastry sheet into 4 squares for 8 packets total. Keep dough cold until ready to fill.
- Fill the packets: Spoon about 2–3 tablespoons of apple filling into the center of each square. Top with a small pat of butter and, if using, a few chopped nuts.
- Seal: Fold each square into a packet (triangle or rectangle) and crimp edges with a fork. Wrap each packet tightly in a double layer of heavy-duty foil to protect from coals.
- Cook over the fire: Place packets on hot coals or on a grill grate above flames. Cook for 15–25 minutes, turning once, until apples are tender and pastry is golden. Cooking time varies by heat—check one packet after 15 minutes.
- Oven/air fryer option: Place unwrapped packets on a baking sheet and bake at 375°F (190°C) for 20–25 minutes, or bake in the air fryer at 360°F (180°C) for about 12–15 minutes for a crisp finish.
Notes
For best results, use firm apples and keep the pastry chilled until assembly. Double-wrap in foil for cooking over coals.
