Ingredients
- 14 oz smoked sausage, sliced into rounds
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, thinly sliced
- 2 cloves garlic, minced
- 1½ tsp Cajun seasoning (adjust to taste)
- 2 tbsp olive oil
- 2 cups cooked rice (white or brown)
- ½ tsp paprika
- ½ tsp dried thyme
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add the sliced smoked sausage and cook for 4–5 minutes until browned. Remove and set aside.
- In the same skillet, add sliced onions and bell peppers. Sauté for 5–7 minutes until soft and caramelized. Stir in garlic and cook for 30 seconds.
- Add Cajun seasoning, paprika, thyme, salt, and pepper. Stir well to coat the veggies.
- Return sausage to skillet. Add cooked rice and gently stir everything together until heated through. Cook for 2–3 more minutes.
- Garnish with chopped parsley and serve warm. Enjoy!
