Ingredients

  • 12 ounces pasta (penne or rigatoni)
  • 1 pound halal smoked sausage, sliced into 1/2-inch rounds
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 bell pepper (red or green), diced
  • 3 cloves garlic, minced
  • 1–2 tablespoons Cajun seasoning (adjust to taste)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded sharp cheddar or pepper jack
  • Salt and black pepper to taste
  • Chopped parsley or green onions for garnish


Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta 1–2 minutes shy of package directions. Drain and set aside.
  2. Brown the sausage: In a large skillet, heat olive oil over medium-high heat. Add the sliced sausage and brown for 3–4 minutes until edges caramelize. Transfer to a plate.
  3. Sauté the aromatics: In the same skillet, add the onion and bell pepper. Sauté 5 minutes until softened. Add garlic and cook 30 seconds more.
  4. Spice it up: Sprinkle in the Cajun seasoning, smoked paprika, and cayenne. Stir for 1 minute until fragrant.
  5. Build the sauce: Pour in chicken broth and heavy cream, scraping up any browned bits. Add the diced tomatoes and bring to a gentle simmer.
  6. Finish: Stir in the cooked pasta and browned sausage. Add the shredded cheese and stir until melted and the sauce is glossy. Taste and adjust salt and pepper.
  7. Serve: Garnish with chopped parsley or green onions and serve hot.

Notes

For best results, use slightly undercooked pasta and finish it in the sauce for better texture and flavor absorption.
