Description

Ingredients

  • 2 cups fresh or frozen mixed berries (such as blueberries, raspberries, and blackberries)
  • 1 cup strawberries, hulled and sliced
  • 1/2 cup granulated sugar (adjust to taste)
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • A pinch of salt
  • 1 cup all-purpose flour (or gluten-free flour for a gluten-free option)
  • 1/2 cup rolled oats (optional for added texture)
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter or a halal butter alternative, cut into cubes
  • 1/2 cup milk (or a dairy-free alternative)
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the berry filling by combining the mixed berries, sliced strawberries, sugar, cornstarch, lemon juice, vanilla extract, cinnamon, and salt in a large bowl. Transfer to a greased 9×9-inch baking dish.
  3. Make the topping by whisking together flour, oats (if using), brown sugar, baking powder, baking soda, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Combine the milk and vanilla extract with the topping mixture until just combined.
  5. Assemble the cobbler by spooning the topping evenly over the berry filling.
  6. Bake in the oven for 35–40 minutes until the topping is golden brown and filling is bubbly.
  7. Cool for about 10 minutes before serving.

Notes
