Ingredients
- 2 cups fresh or frozen mixed berries (such as blueberries, raspberries, and blackberries)
- 1 cup strawberries, hulled and sliced
- 1/2 cup granulated sugar (adjust to taste)
- 2 tablespoons cornstarch
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- A pinch of salt
- 1 cup all-purpose flour (or gluten-free flour for a gluten-free option)
- 1/2 cup rolled oats (optional for added texture)
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter or a halal butter alternative, cut into cubes
- 1/2 cup milk (or a dairy-free alternative)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the berry filling by combining the mixed berries, sliced strawberries, sugar, cornstarch, lemon juice, vanilla extract, cinnamon, and salt in a large bowl. Transfer to a greased 9×9-inch baking dish.
- Make the topping by whisking together flour, oats (if using), brown sugar, baking powder, baking soda, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Combine the milk and vanilla extract with the topping mixture until just combined.
- Assemble the cobbler by spooning the topping evenly over the berry filling.
- Bake in the oven for 35–40 minutes until the topping is golden brown and filling is bubbly.
- Cool for about 10 minutes before serving.
Notes
Serve with vanilla ice cream or whipped cream for the ultimate fall treat. Can be made ahead and reheated.
