Description

Brown Sugar Pumpkin Loaf is a soft, moist, and warmly spiced fall bake made with simple ingredients and rich brown sugar for a cozy, nostalgic flavor.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 cup brown sugar (packed)
  • 1 cup pumpkin puree (canned or homemade)
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Optional: ½ cup chopped walnuts or pecans


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, whisk pumpkin puree, brown sugar, oil, eggs, and vanilla until smooth.
  4. Gradually fold the dry mixture into the wet mixture until just combined.
  5. If desired, stir in nuts.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

This loaf tastes even better the next day as the flavors deepen. Store at room temperature for 3 days, or freeze slices for up to 2 months.
