Ingredients

  • 2 large eggs
  • 1 cup plain yogurt (or buttermilk)
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled and thinly sliced
  • Optional streusel topping:
  • 1/2 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup cold butter, cubed
  • 1 teaspoon cinnamon


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch pan and set aside.
  2. Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon until evenly combined.
  3. Cream butter and eggs: In another bowl, beat the softened butter with the eggs until smooth. Stir in yogurt and vanilla until well blended.
  4. Combine: Fold the wet mixture into the dry ingredients until just combined — don’t overmix.
  5. Add apples: Gently fold in the sliced apples, reserving a few slices to arrange on top for an attractive finish.
  6. Optional streusel: For the streusel, rub the cold butter into brown sugar and flour until the mixture resembles coarse crumbs. Sprinkle evenly over the batter.
  7. Bake: Pour batter into the prepared pan, smooth the top, and arrange remaining apple slices on the surface. Bake 30–35 minutes, or until a toothpick inserted in the center comes out clean and the edges are golden.
  8. Cool and serve: Let the pan cool for 10–15 minutes before slicing. Serve warm with a drizzle of honey, a dusting of powdered sugar, or a scoop of yogurt.

Notes

For a lighter approach, swap a cup of the flour for whole-grain flour. Thin, uniform apple slices ensure every bite has a balance of fruit and cake.
