Ingredients
- 1 lb ground turkey
- 1 ½ cups dry orzo pasta
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 carrot, diced
- 2 cups fresh spinach
- 3 cups low-sodium chicken broth
- 1 cup crushed tomatoes
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- ½ teaspoon chili flakes (optional)
- Salt and black pepper to taste
- ½ cup grated Parmesan cheese (halal option if needed)
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Add the ground turkey and cook until browned, breaking it into small crumbles. Season with salt, pepper, and paprika.
- Stir in the onion, garlic, carrot, and bell pepper. Cook for 5–6 minutes until softened.
- Add the dry orzo and stir to coat it with the flavors.
- Pour in broth and crushed tomatoes, sprinkle oregano and chili flakes. Bring to a boil, then reduce to simmer for 12–15 minutes until the orzo is tender.
- Stir in spinach just before finishing. Let it wilt into the dish.
- Remove from heat, sprinkle Parmesan, and cover for 2 minutes so the cheese melts gently.
Notes
Toast the orzo before adding liquid for extra flavor. Stir regularly while simmering to prevent sticking. Season every step—lean turkey needs layers of flavor. Add more broth if the orzo absorbs too quickly.
