A cozy and indulgent casserole blending BBQ, ranch, and chicken for a perfect family meal.
Ingredients
- 3 cups cooked, shredded chicken (breasts or thighs)
- 2 cups shredded cheddar cheese
- 1 cup barbecue sauce
- 1 cup ranch dressing
- 1 can (10.5 oz) condensed cream of chicken soup
- 2 cups frozen corn (or fresh)
- 1 small onion, finely chopped
- 1 bell pepper, diced
- 1 cup crushed tortilla chips or breadcrumbs
- 2 tablespoons chopped fresh cilantro (optional)
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with olive oil.
- Sauté the onion and bell pepper in olive oil over medium heat until softened, about 5 minutes. Season with salt and pepper.
- Mix shredded chicken, sautéed vegetables, corn, cream of chicken soup, ranch dressing, and half of the cheddar cheese in a large bowl. Stir in the barbecue sauce until well combined.
- Assemble the mixture in your prepared baking dish. Smooth the top and sprinkle the remaining cheddar and crushed tortilla chips evenly over the casserole.
- Bake uncovered for 25–30 minutes until bubbly and the cheese is melted and golden. Let rest for 5–10 minutes before serving.
- Garnish with chopped cilantro and a drizzle of extra BBQ sauce if desired.
Notes
Use warm, shredded chicken for best texture and adjust the BBQ sauce to your preference.
