Description

Crispy, saucy, and downright addictive, Bang Bang Chicken Bites are quick to prep and pack a punch of sweet heat, perfect for weeknights, game days, or crowd-pleasing appetizers.


Ingredients

  • 1½ lbs boneless chicken breast or thighs, cut into bite-sized pieces
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup cornstarch or panko (for coating)
  • Optional: ½ cup buttermilk (for dipping if using panko)
  • Cooking oil or spray (for frying or air frying)
  • Bang Bang Sauce:
  • ½ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • 1–2 tbsp sriracha (adjust to taste)


Instructions

  1. In a large bowl, toss chicken with garlic powder, paprika, salt, and pepper until evenly coated.
  2. For a crispier version, dredge seasoned chicken in cornstarch. For extra crunch, dip in buttermilk, then coat with panko breadcrumbs.
  3. Let coated chicken rest for 10 minutes to help the coating stick.
  4. Air Fryer: Preheat to 400°F (200°C). Lightly spray basket with oil. Arrange chicken in a single layer. Cook 10–12 minutes, flipping halfway, until golden and cooked through.
  5. Oven: Preheat to 425°F (220°C). Line a baking sheet with parchment paper. Bake 18–20 minutes, flipping once. Broil last 2 minutes for extra crispiness.
  6. Stovetop: Heat oil in a deep skillet. Fry chicken in batches for 3–4 minutes per side. Drain on paper towels.
  7. In a small bowl, whisk together mayonnaise, sweet chili sauce, and sriracha to make the Bang Bang sauce.
  8. Toss cooked chicken in the sauce until evenly coated. Serve immediately garnished with chopped scallions or sesame seeds, if desired.

Notes

To reduce spice for kids, use less sriracha or swap with a milder chili sauce. Leftovers reheat well in the air fryer. Great in wraps, bowls, or salads too.
