Ingredients
- 4 boneless, skinless chicken breasts
- 8 slices of deli turkey or chicken ham
- 8 slices of Swiss cheese
- 1 cup of breadcrumbs (preferably whole wheat or gluten-free)
- 2 large eggs
- ½ cup of all-purpose flour (or gluten-free flour blend)
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
- Olive oil or melted butter for drizzling
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the chicken by pounding it between plastic wrap or parchment to about ½ inch thick.
- Layer 2 slices of turkey or chicken ham and 2 slices of Swiss cheese on each chicken breast.
- Roll up each chicken breast tightly and secure with toothpicks if necessary.
- Set up a breading station with three bowls: seasoned flour, whisked eggs, and breadcrumbs.
- Dip each roll in the flour, then the egg, and finally coat in breadcrumbs.
- Arrange the breaded chicken rolls in a greased baking dish and drizzle with olive oil or melted butter.
- Bake for 25-30 minutes or until cooked through and golden brown.
- Serve and enjoy with a side salad or seasonal veggies!
