Description
This creamy, cheesy pasta is packed with all the flavors of a juicy bacon cheeseburger. A perfect comfort food for cozy nights.
Ingredients
- 12 oz (340 g) pasta (macaroni, shells, or cavatappi)
- 1 lb (450 g) ground beef
- 6 slices turkey bacon, chopped
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp ketchup
- 1 tbsp Dijon mustard
- 1/2 cup dill pickle relish (or chopped dill pickles)
- 2 tbsp tomato paste
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella (optional)
- 2 cups milk (whole or 2%)
- 2 tbsp butter
- 2 tbsp all-purpose flour
- Salt and pepper to taste
- Fresh chives or parsley for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta 1–2 minutes less than package directions so it stays firm when baked. Drain and set aside.
- In a large skillet over medium-high heat, cook the chopped turkey bacon until crisp. Remove and drain on paper towels.
- Add the ground beef to the same skillet, season with salt and pepper, and cook until no longer pink. Stir in the onion and garlic and cook 3–4 minutes until soft. Mix in ketchup, mustard, tomato paste, and pickle relish.
- In a separate saucepan, melt butter over medium heat. Whisk in flour to make a roux and cook 1 minute. Gradually whisk in milk and cook until thickened, 4–5 minutes.
- Reduce heat, stir in shredded cheddar (and mozzarella if using) until smooth. Taste and adjust seasoning.
- Toss the cooked pasta with the beef mixture, crispy turkey bacon, and cheese sauce. Transfer to a buttered baking dish, top with extra cheese, and bake at 375°F (190°C) for 15–20 minutes until bubbly and golden.
Notes
Use freshly shredded cheese for the creamiest melt. Don’t overcook the pasta; a little bite keeps it from turning mushy after baking.
