A refreshing salad combining crunchy broccoli, tart-sweet apples, and a creamy dressing, perfect for a cozy fall side or lunchbox.
Ingredients
- 4 cups broccoli florets, small pieces
- 2 medium crisp apples, cored and diced (Fuji or Honeycrisp work well)
- 1/2 cup red onion, thinly sliced
- 1/2 cup halved seedless grapes or dried cranberries
- 1/2 cup toasted walnuts or pecans, chopped
- 1/2 cup plain yogurt or a dairy-free yogurt
- 3 tbsp mayonnaise
- 1 tbsp honey
- 1 tbsp lemon juice
- Salt and pepper to taste
- 3 strips turkey bacon, cooked and crumbled (for smoky crunch)
Instructions
- Prep the produce: Wash and cut broccoli into bite-sized florets. Core and dice the apples, leaving the skin on for color and texture. Thinly slice the red onion.
- Cook turkey bacon: In a skillet, cook the turkey bacon until crisp. Drain on paper towels, then crumble. Set aside.
- Make the dressing: In a medium bowl, whisk together yogurt, mayonnaise, honey, lemon juice, salt, and pepper until smooth.
- Toss everything together: In a large mixing bowl, combine broccoli, apples, red onion, grapes or cranberries, and nuts. Pour the dressing over the salad and toss until evenly coated.
- Fold in bacon: Gently fold in the crumbled turkey bacon last so it stays crisp.
- Chill and serve: Chill the salad for at least 30 minutes to let flavors meld. Serve cold or at cool room temperature.
Notes
For extra crisp broccoli, briefly blanch and shock it in ice water. This salad can be made gluten-free by using certified gluten-free mayo and yogurt.
