Ingredients
- 4 large russet potatoes
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1 cup sour cream (or Greek yogurt for a healthier option)
- 1/2 cup chopped green onions
- 1/2 cup cooked bacon bits (or halal turkey bacon)
- Optional: chili flakes, garlic powder, or your favorite seasoning for added flavor
Instructions
- Begin by preheating your Airfryer to 400°F (200°C).
- While it’s heating, wash the russet potatoes thoroughly under cold water.
- Pat the potatoes dry with a clean kitchen towel.
- Drizzle olive oil over each potato and rub it in to ensure an even coating.
- Sprinkle salt and pepper all over the potatoes.
- Carefully place the seasoned potatoes in the Airfryer basket.
- Airfry for 35-40 minutes, flipping them halfway through.
- Once cooked, remove the potatoes from the Airfryer and let them cool for a couple of minutes.
- Create a slit on the top of each potato and use a fork to fluff up the inside.
- Add shredded cheddar cheese, sour cream, turkey bacon bits, and green onions.
- If desired, season with chili flakes or garlic powder.
- Serve immediately while hot and melty.

Choose large, evenly shaped russet potatoes for best results. Store leftovers in an airtight container in the fridge for up to 3 days.
