Ingredients
- 2 medium zucchinis (fresh and firm)
- 1 cup breadcrumbs (use gluten-free if desired)
- 1/2 cup grated Parmesan cheese (or a halal alternative)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried Italian herbs (such as oregano or basil)
- Salt and pepper to taste
- 1 large egg (or a flaxseed egg for a vegan option)
- Olive oil spray for cooking
Instructions
- Prep the zucchini: Start by washing the zucchinis under cool running water. Pat them dry and slice into 1/4-inch rounds.
- Prepare the coating: In a mixing bowl, combine breadcrumbs, Parmesan cheese, garlic powder, onion powder, Italian herbs, salt, and pepper. Mix well.
- Beat the egg: In a separate bowl, beat the egg until slightly frothy.
- Coat the zucchini: Dip each zucchini round into the egg wash and then roll in the breadcrumb mixture.
- Preheat the air fryer: Set the air fryer to 400°F (200°C) and preheat for about 5 minutes.
- Place the coated zucchini in the air fryer basket, ensuring they are in a single layer. Lightly spray the tops with olive oil spray.
- Cook the zucchini: Air-fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
