Ingredients
- 2 medium zucchinis
- 1 cup of breadcrumbs (use gluten-free breadcrumbs if needed)
- 1/2 cup of grated Parmesan cheese (or a plant-based alternative)
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 large eggs
- Olive oil spray (or any cooking spray)
Instructions
- Prep the Zucchini: Wash the zucchinis thoroughly and cut both ends off. Slice each zucchini into long, thin strips, resembling fries. Aim for uniform sizing to ensure even cooking.
- Set Up Breading Station: In one bowl, whisk together the eggs. In a separate bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, paprika, salt, and black pepper.
- Coat the Zucchini: Dip each zucchini strip first into the egg mixture, letting any excess drip off. Then, roll it in the breadcrumb mixture, pressing gently to coat well. Place the coated zucchini fries on a baking sheet.
- Preheat the Air Fryer: Before cooking, preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Air Fry the Zucchini Fries: Lightly spray the air fryer basket with olive oil spray. Arrange the zucchini fries in a single layer, ensuring that they do not overlap. Spray the top of the fries lightly with olive oil as well. Cook for 10-12 minutes, flipping them halfway through until they are golden brown and crispy.
- Serve and Enjoy: Once cooked, remove the zucchini fries from the air fryer and serve immediately with your favorite dipping sauce—ranch dressing, marinara, or tangy yogurt dip works wonders!
