A delightful snack made by roasting fresh tomatoes in the air fryer, perfect for fall gatherings.
Ingredients
- 4 medium-sized ripe tomatoes, preferably heirloom or vine-ripened
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- ½ teaspoon salt, to taste
- ½ teaspoon black pepper
- Fresh basil leaves for garnish (optional)
Instructions
- Prep the tomatoes: Wash thoroughly, pat dry, slice in half lengthwise, and scoop out some seeds.
- Season them: In a bowl, combine olive oil, garlic powder, oregano, salt, and black pepper. Toss in halved tomatoes until well-coated.
- Preheat the air fryer: Set to 375°F (190°C) for 3-5 minutes.
- Arrange the tomatoes: Place cut side up in the air fryer basket, avoiding overcrowding.
- Air Fry: Cook for 10-12 minutes, checking at 8 minutes to avoid overcooking.
- Garnish and serve: Drizzle with olive oil and garnish with fresh basil if desired.
