Description
A warm and comforting Air-Fryer Teriyaki Salmon Cauliflower Rice Bowl, perfect for fall dinners.
Ingredients
- 2 fillets of salmon
- 1/4 cup soy sauce (or gluten-free soy sauce)
- 2 tablespoons honey or maple syrup
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon sesame seeds (for garnish)
- 2 cups cauliflower rice (store-bought or homemade)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup chopped green onions (for garnish)
- 1/2 cup steamed broccoli florets (optional)
Instructions
- Marinate the salmon by combining soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger in a medium bowl. Place the salmon in the marinade, cover, and refrigerate for at least 30 minutes.
- Prepare the cauliflower rice by adding olive oil to a skillet over medium heat. Add cauliflower rice, season with salt and pepper, and sautรฉ for 5-7 minutes until tender. If using, add steamed broccoli during the last 2 minutes.
- Cook the salmon in an air fryer preheated to 400ยฐF (200ยฐC) for 8-10 minutes or until the internal temperature reaches 145ยฐF (63ยฐC).
- Assemble your bowl by layering cauliflower rice and topping with air-fried teriyaki salmon. Garnish with sesame seeds and green onions.
Notes
For richer flavor, marinate salmon for up to two hours. Ensure air fryer isn’t overcrowded for even cooking.
