A lighter yet indulgent version of classic meatloaf cooked in the air fryer, perfect for fall.
Ingredients
- 1 pound ground turkey or lean ground beef
- 1 cup oats, ground to a flour-like consistency
- 1/2 cup finely chopped onion
- 1/2 cup grated carrot
- 1/4 cup chopped fresh parsley or 2 tablespoons dried parsley
- 1 large egg
- 1/4 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- Topping: 1/4 cup ketchup mixed with 1 tablespoon brown sugar
Instructions
- Preheat your Air Fryer: Set your air fryer to 360°F (182°C) to prepare for cooking.
- Mix Ingredients: In a large mixing bowl, combine the ground turkey (or beef), ground oats, onion, grated carrot, parsley, egg, 1/4 cup of ketchup, Worcestershire sauce, mustard, garlic powder, onion powder, salt, and pepper. Use your hands or a spatula to mix until everything is well incorporated.
- Shape the Loaf: Transfer the meat mixture to a piece of parchment paper or a clean surface. Shape it into a loaf, about 7 inches long and 4 inches wide.
- Prepare the Air Fryer Basket: Lightly spray the air fryer basket with cooking spray to prevent sticking. Carefully place the formed meatloaf in the basket.
- Add the Topping: In a small bowl, mix the remaining ketchup with brown sugar. Brush this mixture over the top of the meatloaf for a sweet and tangy glaze.
- Air Fry: Cook the meatloaf in the air fryer for 25-30 minutes, or until the internal temperature reaches 165°F (74°C). Check at the 25-minute mark and adjust cooking time as necessary.
- Rest and Serve: Once cooked, let the meatloaf rest for about 5-10 minutes before slicing.
Notes
Avoid overmixing the ingredients to maintain a tender texture. Using fresh ingredients enhances flavor.
