Ingredients
- 1 lb ground lamb (or lean beef)
- 1 cup carrots, diced
- 1 cup peas (fresh or frozen)
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 cup beef broth (or vegetable broth for a vegetarian option)
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- Salt and pepper, to taste
- 2 lbs potatoes, peeled and cubed
- 1/2 cup milk (or almond milk for a dairy-free version)
- 4 tbsp butter (or olive oil for a dairy-free version)
- Optional: 1/4 cup shredded cheese for topping
Instructions
- Prepare the Filling: In a large skillet over medium heat, brown the ground lamb or beef until fully cooked. Drain any excess fat.
- Add the chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion becomes translucent.
- Stir in the carrots and cook for another 5 minutes until they start to soften.
- Add the peas, thyme, rosemary, tomato paste, Worcestershire sauce, and broth. Season with salt and pepper. Allow it to simmer on low heat for about 10 minutes, stirring occasionally.
- Make the Mashed Potatoes: Meanwhile, boil the cubed potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add in the butter and milk. Mash until smooth and creamy, seasoning with salt and pepper to taste.
- Assemble the Pie: In a greased, oven-safe dish that fits in your air fryer, layer the meat filling at the bottom.
- Spoon the mashed potatoes over the filling evenly. Use a fork to create texture on top for extra crispiness.
- If desired, sprinkle shredded cheese on top for an extra layer of flavor.
- Preheat your air fryer to 375°F (190°C).
- Carefully place your dish in the air fryer basket. Cook for 12-15 minutes or until the potato topping turns golden brown and the filling bubbles.
