Description

A cozy side dish combining roasted potatoes and cauliflower, perfect for autumn evenings.

Ingredients

  • 2 medium-sized potatoes (Yukon Gold or Russet)
  • 1 medium head of cauliflower
  • 2 tablespoons olive oil (or your favorite cooking oil)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked paprika adds a nice depth)
  • Salt and pepper to taste
  • Fresh herbs for garnish (like parsley or thyme)

Instructions

  1. Prepare the vegetables: Wash and peel the potatoes if desired, then cut them into bite-sized cubes. Remove the cauliflower florets and cut into similarly sized pieces.
  2. Season the veggies: In a large bowl, combine the potatoes and cauliflower, drizzle with olive oil, and add garlic powder, paprika, salt, and pepper. Toss until coated.
  3. Air fry the mixture: Preheat the air fryer to 400°F (200°C) for 5 minutes, then add the seasoned vegetables to the basket in a single layer. Cook for 15-20 minutes, shaking halfway through.
  4. Check for doneness: After 15 minutes, ensure the vegetables are golden and crispy. Continue air frying in 2-minute increments if needed.
  5. Serve and enjoy: Transfer the cooked vegetables to a serving dish, garnish with fresh herbs, and serve warm.

Notes

Don’t overcrowd the air fryer for best results. Experiment with different seasonings to suit your taste.
