Ingredients
- 2 medium-sized potatoes (Yukon Gold or Russet)
- 1 medium head of cauliflower
- 2 tablespoons olive oil (or your favorite cooking oil)
- 1 teaspoon garlic powder
- 1 teaspoon paprika (smoked paprika adds a nice depth)
- Salt and pepper to taste
- Fresh herbs for garnish (like parsley or thyme)
Instructions
- Prepare the vegetables: Wash and peel the potatoes if desired, then cut them into bite-sized cubes. Remove the cauliflower florets and cut into similarly sized pieces.
- Season the veggies: In a large bowl, combine the potatoes and cauliflower, drizzle with olive oil, and add garlic powder, paprika, salt, and pepper. Toss until coated.
- Air fry the mixture: Preheat the air fryer to 400°F (200°C) for 5 minutes, then add the seasoned vegetables to the basket in a single layer. Cook for 15-20 minutes, shaking halfway through.
- Check for doneness: After 15 minutes, ensure the vegetables are golden and crispy. Continue air frying in 2-minute increments if needed.
- Serve and enjoy: Transfer the cooked vegetables to a serving dish, garnish with fresh herbs, and serve warm.
Notes
Don’t overcrowd the air fryer for best results. Experiment with different seasonings to suit your taste.
