Ingredients

  • 1 cup all-purpose flour (or gluten-free flour for a gluten-free version)
  • 1/2 cup creamy peanut butter
  • 1/2 cup brown sugar (packed)
  • 1/2 cup honey or maple syrup
  • 1/3 cup milk or a non-dairy alternative
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: 1/4 cup rolled oats, 2 tablespoons melted coconut oil, and 2 tablespoons brown sugar (for a streusel topping)


Instructions

  1. Prepare the Air Fryer: Preheat your air fryer to 320°F (160°C).
  2. Mix Wet Ingredients: In a large bowl, combine the peanut butter, brown sugar, honey (or maple syrup), milk, egg, and vanilla extract. Whisk until smooth and creamy.
  3. Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Combine the Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Prepare Muffin Molds: Lightly grease silicone muffin cups or line them with paper liners.
