A cozy fall delight, these Air Fryer Peanut Butter Muffins are soft, fluffy, and infused with rich peanut butter flavor, perfect for any occasion.
Ingredients
- 1 cup all-purpose flour (or gluten-free flour for a gluten-free version)
- 1/2 cup creamy peanut butter
- 1/2 cup brown sugar (packed)
- 1/2 cup honey or maple syrup
- 1/3 cup milk or a non-dairy alternative
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Optional: 1/4 cup rolled oats, 2 tablespoons melted coconut oil, and 2 tablespoons brown sugar (for a streusel topping)
Instructions
- Prepare the Air Fryer: Preheat your air fryer to 320°F (160°C).
- Mix Wet Ingredients: In a large bowl, combine the peanut butter, brown sugar, honey (or maple syrup), milk, egg, and vanilla extract. Whisk until smooth and creamy.
- Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Combine the Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Prepare Muffin Molds: Lightly grease silicone muffin cups or line them with paper liners.
- Fill the Cups: Spoon the muffin batter into the prepared cups, filling each about 2/3 full.
- Air Fry the Muffins: Place the muffin molds into the air fryer basket. Cook for about 12-15 minutes.
- Cool and Serve: Let the muffins cool in the molds for about 5 minutes before transferring them to a wire rack.
