Ingredients
- 4 large eggs
- 1/4 cup milk (or plant-based milk)
- 1/2 cup bell peppers, diced
- 1/2 cup fresh spinach or kale, chopped
- 1/4 cup onion, finely chopped
- Salt and pepper, to taste
- 1/2 cup cheese (cheddar, feta, or your favorite)
- Fresh herbs for garnish
Instructions
- Prepare the mixture: In a large bowl, whisk together the eggs and milk until well combined. Season with salt and pepper according to your taste.
- Add vegetables: Stir in the diced bell peppers, chopped spinach, and onions. Ensure all the vegetables are well-coated with the egg mixture.
- Preheat the Air Fryer: Set your Air Fryer to 320°F (160°C) and let it preheat for about 3-5 minutes.
- Add cheese: Pour half of the egg mixture into a lightly greased air fryer-safe dish. Sprinkle half of the cheese over the top.
- Cook the omelette: Carefully place the dish in the preheated Air Fryer. Cook for about 8-10 minutes until the eggs are set but still moist on top.
- Finish it off: Carefully remove the omelette dish and sprinkle the remaining cheese on top. Return it to the Air Fryer for an additional 1-2 minutes, until the cheese is melted and bubbly.
- Serve and enjoy: Once cooked, let the omelette sit for a minute before slicing. Garnish with fresh herbs and serve warm.
