Description

Delicious and healthy Air Fryer Oatmeal Bars, perfect for breakfast or as a snack, featuring oats, cinnamon, and apples.

Ingredients

  • 2 cups rolled oats
  • 1 cup mashed overripe bananas (about 2 large bananas)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped apples (optional)
  • 1/3 cup chopped nuts (optional, such as walnuts or pecans)
  • 1/3 cup raisins or chocolate chips (optional)

Instructions

  1. Prepare your air fryer: Preheat your air fryer to 350°F (175°C) for about 5 minutes.
  2. Mix the wet ingredients: In a large mixing bowl, combine the mashed bananas, applesauce, honey (or maple syrup), and vanilla extract. Stir until well mixed.
  3. Combine the dry ingredients: In a separate bowl, mix the rolled oats, cinnamon, baking powder, and salt.
  4. Combine everything: Pour the dry ingredients into the wet mixture, stirring until just combined. If desired, fold in the chopped apples, nuts, and raisins or chocolate chips.
  5. Prepare the air fryer basket: Line the air fryer basket with parchment paper to prevent sticking and make cleanup easier.
  6. Pour the mixture: Spread the batter evenly in the basket, smoothing the top with a spatula.
  7. Air Fry: Cook for 15-18 minutes, checking for doneness by inserting a toothpick. If it comes out clean, they are ready!
  8. Cool and cut: Once cooked, let the oatmeal bars cool in the basket for 10 minutes before transferring them to a wire rack to cool completely. Once cooled, cut into squares or bars.

Notes

For additional flavor, feel free to add a sprinkle of nutmeg. Store in an airtight container to maintain freshness.
