Description

A cozy fall favorite featuring moist meatloaf cooked in an air fryer, paired with rich and creamy mashed potatoes.

Ingredients

  • 1 lb ground beef (or halal alternative like ground turkey or chicken)
  • 1/2 cup breadcrumbs (use gluten-free if desired)
  • 1/2 cup finely chopped onion
  • 1/2 cup milk
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup ketchup (divided, for topping and the meatloaf mixture)
  • 2 lbs russet potatoes, peeled and cut into chunks
  • 1/2 cup milk (or cream for extra richness)
  • 4 tablespoons butter
  • Salt and pepper, to taste
  • Optional: garlic powder, to taste
  • Fresh chives or parsley, for garnish

Instructions

  1. Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, breadcrumbs, chopped onion, milk, egg, Worcestershire sauce, garlic powder, salt, and pepper. Mix until just combined—overmixing can lead to dense meatloaf.
  2. Shape the Meatloaf: Transfer the mixture into a loaf shape and place it onto a piece of parchment paper. This makes transferring to the air fryer easier.
  3. Add the Topping: Spread half the ketchup over the top of the meatloaf. This gives it a tasty glaze while it cooks.
  4. Preheat the Air Fryer: Preheat your air fryer to 350°F (175°C).
  5. Cook the Meatloaf: Carefully place the meatloaf in the air fryer basket. Cook for approximately 25-30 minutes or until the internal temperature reaches 160°F (71°C). If desired, brush the remaining ketchup on top during the last 5 minutes of cooking.
  6. Boil the Potatoes: In a large pot, add the peeled and chopped russet potatoes. Cover with cold water and add a pinch of salt. Bring to a boil over medium-high heat and cook until tender (about 15-20 minutes).
  7. Drain and Mash: Drain the potatoes and return them to the pot. Add the milk, butter, and any additional seasonings like garlic powder. Mash until creamy and smooth.
  8. Season and Serve: Taste the mashed potatoes and adjust salt and pepper as necessary. Garnish with fresh chives or parsley for a pop of color.
  9. Plate the Dish: Serve slices of meatloaf alongside a generous scoop of creamy mashed potatoes. Enjoy the warm, cozy flavors of fall!

Notes

For the best texture, do not overmix the meatloaf mixture. If you don’t have an air fryer, you can bake the meatloaf in a regular oven at 350°F (175°C) for about 1 hour. Make sure to check the meatloaf’s internal temperature with a meat thermometer for perfect doneness.
