Deliciously marinated chicken or tofu skewers, infused with sweet and spicy gochujang, perfect for cozy fall gatherings.
Ingredients
- 1 pound chicken breast, cut into bite-sized pieces (or tofu for a vegetarian option)
- 1 bell pepper, cut into cubes
- 1 red onion, cut into chunks
- 1 zucchini, sliced into rounds
- 1 cup mushrooms, halved
- Wood or metal skewers (soak wooden skewers in water for 30 minutes)
- 3 tablespoons gochujang (Korean chili paste)
- 2 tablespoons soy sauce (or tamari for gluten-free option)
- 1 tablespoon honey or maple syrup
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon rice vinegar
- 1 teaspoon grated ginger
- Salt and pepper to taste
Instructions
- Prepare the marinade: In a bowl, combine gochujang, soy sauce, honey, sesame oil, garlic, rice vinegar, ginger, salt, and pepper. Whisk until well combined.
- Marinate the protein: Add chicken (or tofu) to the marinade, ensuring each piece is well coated. Cover and let it marinate for at least 30 minutes; for best results, marinate for 2 hours in the refrigerator.
- Assemble the skewers: Thread the marinated chicken (or tofu) onto the skewers, alternating with bell pepper, onion, zucchini, and mushrooms.
- Preheat the air fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Air fry the skewers: Place the skewers in the air fryer basket in a single layer, ensuring they don’t overlap. Cook for 10-12 minutes, flipping halfway through, until the chicken is cooked through and has a nice char.
- Serve and enjoy: Remove skewers from the air fryer, let cool for a minute before serving. Drizzle with additional gochujang if desired, and serve with rice or salad.
Notes
For even cooking, cut ingredients uniformly and avoid overcrowding the air fryer basket.
