Description
A deliciously crispy and flavorful air-fried chicken recipe that brings KFC-style crunch to your home, with less oil and more comfort.
Ingredients
- 1.5–2 lb skin-on chicken pieces (drumsticks, thighs, or a mix)
- 1 cup buttermilk
- 1 large egg
- 1 1/2 cups all-purpose flour
- 1/2 cup cornstarch
- 1 tbsp paprika
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp black pepper
- 1 tsp salt
- 1/2 tsp cayenne (optional)
- 2 tbsp olive oil or neutral oil for misting
Instructions
- Pat chicken pieces dry with paper towels.
- Whisk together buttermilk and egg in a bowl. Add a pinch of salt and stir. Submerge the chicken in the mixture and refrigerate for 30 minutes to 4 hours.
- Combine flour, cornstarch, paprika, garlic powder, onion powder, oregano, thyme, black pepper, cayenne, and salt in a shallow dish. Mix well.
- Remove a piece of chicken from the buttermilk, letting excess drip off. Press it into the flour mixture for a thick coating.
- Preheat air fryer to 375°F (190°C) for 3–5 minutes. Mist the basket with oil.
- Arrange chicken in a single layer without crowding. Spray tops lightly with oil and cook for 18–22 minutes, flipping halfway through.
- Increase temperature to 400°F (200°C) for the last 2–3 minutes for extra browning.
Notes
Ensure chicken is very dry before marinating for best coating adherence. Use an oil mister for crunchy results and avoid overcrowding the air fryer basket.
