Description

A warm, comforting jacket potato with a fluffy interior and crispy skin, perfect for fall.

Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder (optional)
  • Freshly ground black pepper, to taste
  • Your favorite toppings (e.g., sour cream, shredded cheese, scallions, bacon bits, steamed broccoli)

Instructions

  1. Wash the potatoes: Scrub the potatoes under cold running water to remove any dirt, then dry them thoroughly with a clean kitchen towel.
  2. Prick the skins: Using a fork, gently prick the skins of each potato about 5-6 times to allow steam to escape during cooking.
  3. Rub each potato with olive oil, ensuring an even coating. Sprinkle the sea salt and garlic powder (if using) evenly over the tops.
  4. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  5. Place the seasoned potatoes in a single layer in the air fryer basket.
  6. Air fry the potatoes for 35-40 minutes, flipping halfway through, until they are tender inside and the skin is crispy.
  7. Let the potatoes cool for a few minutes, then slice them open and fluff the insides with a fork. Add your favorite toppings to enjoy.

Notes

For best results, opt for large russet potatoes and ensure to prick the skins to prevent bursting.
